FRESH MUSHROOM SALAD image

1/2 lb fresh spinach
1 large head romaine lettuce
1/2 lb fresh mushrooms
6 strip bacon
3 green onions
Dressing:
6 Tbs salad oil
2 Tbs lemon juice
1 egg yolk
1 clove garlic
3/4 tsp salt
1/4 tsp pepper
1/4 tsp sugar
1/8 tsp dry mustard

Steps:

  • 1.Wash spinach, discard stems 2. Wash romaine, leave outer leaves whole 3. Wrap spinach and romaine in damp towel, chill 4. Slice mushrooms 5. Cook bacon to be crisp(drain and crumble) 6. Thinly slice green onions and tops 7. Make dressing in blender; blend til smooth
