French Coconut Pie image

I was looking at Paula Deen's recipe for French Coconut Pie. All the reviews said to add vanilla extract and some coconut extract. I thought I would add some other things to make it even better.

Number Of Ingredients 12

1/2 stick(s) organic butter or european butter, melted
2 - egg whites and 1 egg yolk, slightly beaten
1 3/4 teaspoon(s) tapioca flour
1 cup(s) sugar
1 1/8 cup(s) fresh coconut or sweetened coconut from the store
1 cup(s) fresh coconut milk or 1 cup of coconut cream bought from the store
1 - vanilla bean scrapped or 1 tsp. or more of vanilla extract
1/2 teaspoon(s) coconut extract
2 tablespoon(s) rum or rum extract or brandy or extract (optional)
optional - slivered almonds and melted chocolate chips
1 - deep dish pie shell, unbaked
2 tablespoon(s) lyle's golden syrup or organic corn syrup

Steps:

  • Brush pie crust with syrup lightly on bottom, sides, and edges. Bake at 350 for about 5 to 7 minutes. Cool and refrigerate. Mix tapioca flour with the sugar, add the coconut milk or coconut cream, vanilla bean seeds, extracts and rum. Add the eggs. Mix well. but do not beat. Add the coconut and pour into a pie shell. Bake 350* 45 to 60 minutes. Cool and chill
  • Optional...drizzle melted chocolate on top and slivered almonds when it has chilled.
