Forty - Clove Chicken image

If you like garlic, you will love this chicken..so yummy!

Number Of Ingredients 12

1 ( 3 pounds) frying chicken, or 4 -6 skin on chicken breasts
40 clove fresh garlic, peeled and left whole
1/2 c dry white wine
1/4 c dry vermouth
1/4 c olive oil
4 ribs celery, thickly sliced
2 Tbsp finely chopped parsley
2 tsp dried basil
1 tsp dried oregano
pinch of crushed red pepper
1 lemon
salt and pepper to taste

Steps:

  • 1. Preheat oven to 375 F. Place chicken pieces, skin side up, in a single layer in shallow baking pan. Combine garlic, wine, vermouth, oil, celery, parsley, basil, oregano, and red pepper in medium sized bowl; mix thoroughly. Sprinkle garlic mixture over chicken pieces.
  • 2. Remove peel from lemon in thin strips; place peel throughout pan. Season with salt and pepper. Cover pan with foil. Bake 40 - 45 minutes. Remove foil and bake another 15 minutes.
