2 cups diced Fontina cheese
1 cup milk
1 tablespoon butter
2 egg, lightly beaten
ground black pepper

Steps:

  • 1. Put the cheese in a bowl with the milk and let soak for 2-3 hours.Transfer to a double boiler or a heatproof bow set over a pen of simmering water. 2. Add the butter and eggs and cook gently, stirring until the cheese has melted to a smooth sauce with the consistency of custard. 3. Remove from heat and season with pepper.Transfer to a serving dish and serve immediately. **Don't over heat the sauce, or the eggs might curdle. Very low heat will produce a smooth sauce **Pour the Fonduta onto hot Pasta or polenta for a really satisfying main dish.
