- Salsa Cook the pepper until warm and is just about to loose it's crunch Add it to a pan with a diced beef tomato and thinly sliced chillies leaving in the pips if you want extra heat. Combine with chopped basil. Cut the onion up small and fry in another frying pan until starting to caramelise and them add it to the rest of the salsa. Cook until warm and ingredients have combined. You may need to add a bit of water to make it a bit less thick.
- Steak Put a knob of butter in a hot pan along with three cloves of crushed garlic. Sear the steaks. This should take about two minutes per side if the steaks are about 2cm thick. If you would like your steak cooked more leave on the heat longer. Baste with the juice you cook it with to keep it moist and lock in the flavours.
- Slice your ciabatta bread and lightly toast. Mix four table spoons of mayo with four teaspoons of whole mustard and spread on one piece of the toast. Put one or two pieces of baby gem lettuce atop the mustard dressing. Add the thinly cut steak and them the salsa on top. Cut in half and serve with either chips or sauted potatoes for a bigger meal.
