FIG AND WHEAT BERRY SALAD image

Number Of Ingredients 7

1 cup wheat berries
4 ounces arugula leaves (about 4 packed cups)
1 tablespoon olive oil
1 1/2 tablespoons raspberry vinegar
1/2 cup crumbled feta cheese
6 figs, trimmed and cut into sixths
Coarse salt and freshly ground black pepper to taste

Steps:

  • Cook wheat berries according to package directions. Add arugula to a large bowl, cover with warm wheat berries and toss. Drizzle with oil and vinegar, and toss again. Gently fold in feta and figs, and season with salt and pepper to taste. Serve warm or at room temperature.
