JAMAICAN COCONUT BREAD image

Number Of Ingredients 12

3 cups flour
3/4 cup sugar
4 tsp baking powder
1 tsp salt
1/2 tsp cinnamon powder
1/8 tsp nutmeg
1 1/3 cups grated coconut
1 1/2 cup coconut milk
1 egg, beaten
2 tbsp vegetable oil
1 tsp vanilla extract
2 tbsp sugar

Steps:

  • Preheat oven to 350 degrees Combine all dry ingredients with the grated coconut in a large bowl. Combine the coconut milk, egg, vegetable oil and vanilla extract, blend well. Combine both the liquid ingredients with the dry, mix well. Pour batter into two 9x5x3 loaf pans. Optional: With the remaining grated coconut combine with 2 tbsp sugar and sprinkle over the batter and bake. Bake time approximately 1 hour or until cooked through.
