FAMOUS FISH STEW image

Yield makes 4 generous servings

Number Of Ingredients 9

1 teaspoon minced garlic
2 tablespoon olive oil
1 tablespoon fresh chopped parsley
1 teaspoon oregano
1 large can pear tomatoes
1 lb fresh halibut
salt and pepper to taste
1/2 cup penne pasta
1 quart water

Steps:

  • In medium size pan saute garlic with olive oil. Run pear tomatoes in blender to mash and add to garlic mixture. Add herbs and cook on low for 20 minutes. Cut up halibut into 1 inch pieces and add to tomatoe mixture cook on low for 10 minutes or until fish flakes easily. In another pan with water cook the penna pasta until al dente. Drain and add to fish mixture. Season and Serve hot.
