EGGPLANT/ROASTED RED BELL PEPPER RELISH image

cooking spray
2 tsp evoo
1 tsp evoo-separately
1 1/2 lb eggplant,1 inch slices
1/8 tsp salt
1/2 cup roasted red pepper,chopped
1 tbl snipped fresh parsley
1/2 tsp red wine vinegar
1 small clove garlic, minced
pinch of pepper

Steps:

  • preheat oven 425 lightly spray cookie sheet, set aside using 2 tsp oil, brush both sides of eggplant slices place as 1 layer on cookie sheet sprinkle tops with salt roast 18-20 minutes until slices are lightly browned on bottom flip, bake about 8 minutes, until browned on bottom transfer to plates meanwhile in small bowl stir together bell pepper, parskey, vinegar,garlic,pepper and 1 tsp oil spoon over eggplant
