I love this bread. It does have a distinct eggnog flavor, so if you don't like eggnog, you won't like it! I just stumbled upon this recipe recently, but it will become a part of my yearly Christmas baking. Always play around with the baking time depending on the size of loaf pan you use. Number Of Ingredients 11

2 1/4 c all purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
2 eggs
1 c eggnog
3/4 c sugar
1/2 c butter, melted
2 tsp vanilla extract
2 tsp rum extract

Steps:

  • 1. In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg.
  • 2. In another bowl, beat the eggs, eggnog, sugar, melted butter, vanilla extract and rum extract. Stir into dry ingredients just until moistened.
  • 3. Pour into three greased 5 3/4-in. X 3-in. X 2-in. loaf pans. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • 4. Cool for 10 minutes before removing from pans to wire racks. Yield: 3 loaves.
