Egg Sandwiches For A Crowd image

Number Of Ingredients 9

12 Large eggs
1/4 cup Heavy cream
3/4 teaspoon Kosher salt
1/4 teaspoon Black pepper
1 cup Shredded cooked turkey
1 cup Baby spinach
6 pieces Cooked crumbled bacon
11/2 cups Shredded Swiss cheese
16 slices Toasted Pullman loaf, English muffins, Brioche, etc.*

Steps:

  • Preheat oven to 400 degrees with rack in the middle.
  • In a large bowl, whisk eggs, salt and pepper. Fold in turkey and baby spinach, and 3 of the crumbled bacon slices. Add half of the shredded Swiss cheese.
  • Pour into a buttered 9 x 13-inch baking dish. Top with the other 3 crumbled slices of bacon.and the other 3/4 cup of shredded Swiss.
  • Bake until set, about 18 minutes.
  • Switch oven to broil and cook until browned in spots, about 3 minutes.
  • Let cool slightly, and then cut into 8 rectangles. Serve between slices of toasted bread. with a combination of mustard and mayonnaise.
  • *To toast multiple slices of bread, broil on a rimmed baking sheet about 2 minutes per side.
