Steps:
- Saute onion and garlic until onion is transparent. In a separate pan, boil spinach until tender and drain excess liquid. Combine onion, garlic, spinach, soup, light Velveeta and parmesan cheese in sauce pan. Heat until cheese is melted thoroughly. Add salt and pepper if desired.
- Transfer spinach mixture into casserole dish. Top with shredded cheese and breadcrumbs.
- Bake at 350 degrees F for 20 minutes or until topping has browned.
