- In a medium pot, melt 1 tbls of light butter. Then add the sliced green onions and let simmer for a few minutes. Add all ingredients except shrimp. While this begins to simmer, quickly dice the shrimp into 1/3 inch chunks and add to the bisque. When the shrimp starts to get red and boil the bisque is done.
