EASY RICE PUDDING image

Nothing but smooth, soothing comfort food!

Number Of Ingredients 8

1 bag(s) boil-in-bag white rice
1/3 c sugar
1-1/2 Tbsp cornstarch
2 c milk
2 eggs, beaten
2 Tbsp butter
1 tsp vanilla extract
1/2 tsp ground cinnamon

Steps:

  • 1. Cook the rice according to directions on package. Set aside to cool.
  • 2. In a medium saucepan, combine the sugar and cornstarch. Add milk and eggs, mixing well.
  • 3. Stir in the rice and bring mixture to a boil, stirring constantly. Reduce heat and cook for 20 minutes, stirring frequently.
  • 4. Remove from heat and add the butter and vanilla, stirring until butter is melted.
  • 5. Pour into serving bowls and sprinkle with cinnamon. Serve warm.
