EASY PEASY GINGER BEER image

Yield 4-6 people

Number Of Ingredients 5

5oz fresh ginger
4 tablespoons brown sugar
2-3 lemons
4 cups club soda or sparkling mineral water
sprigs of fresh mint

Steps:

  • Grate your ginger on a coarse cheese grater, leaving the skin on, if you like. Put ginger with it's pulpy juice into a bowl and in your brown sugar. Remove the fine from 2 of you lemons with vegetable peeler, add to bowl, and slightly bash and squash with something heavy like a pestle or a rolling pin. Do this for about 10 seconds to mix up the flavors. Squeeze the juice from all 3 lemons and add most of it to the bowl. Pour in your fizzy water or soda water. Allow to sit for 10 minutes then taste. If the lemons are too sour, add more sugar; if too sweet, add more lemon juice. Pass the ginger beer through a coarse sieve into a large pitcher and add lots of ice and some peppermint sprigs.
