Easy Old Fashion Spanish Rice-Connie's image

The origination of this recipe is unknown. What I do know is that my family has been tweaking this for years. This is the version my family uses and it's wonderful. Easy to make, one pan dish that's a highlight of any meal. Enjoy!

Number Of Ingredients 13

1/2 c green pepper, seeded and chopped
1/4 c onion, chopped
1 clove garlic, minced
1/2 tsp dried basil, crushed
1/2 tsp dried rosemary, crushed
2 Tbsp bacon grease (olive oil or cooking oil could also be used instead)
2 c chicken sock or broth
1 c regular white rice
1 c tomato, peeled and chopped
1 tsp salt
1/8 tsp black pepper
fresh parley for garnish
sour cream for topping (if desired, we don't use it very much)

Steps:

  • 1. In a large skillet with a lid,, cook green pepper, onion, garlic, basil, and rosemary in bacon grease or substitute until veggies are tender.
  • 2. Stir in chicken stock.
  • 3. Add rice, tomato, salt, and pepper to pan.
  • 4. Cook, covered, over low heat until rice is done (about 20 minutes).
  • 5. Fluff rice mixture and garnish with parsley. Top with a dab of sour cream if desired.
  • 6. Enjoy!
