Easy Mexican Casserole image

A quick and easy Mexican-style casserole that I found on Allrecipes.

1 lb ground beef
2 c salsa
1 (16 oz.) can(s) chili beans, drained (i used kidney beans)
3 c tortilla chips, crushed
2 c sour cream
1 (2 oz.) can(s) sliced black olives, drained
1/2 c chopped green onion (i used a chopped yellow onion)
1/2 c fresh tomato (i used 1 can of diced tomatoes)
2 c shredded cheddar cheese

Steps:

  • 1. Preheat oven to 350 F.
  • 2. In a large skillet over medium-high heat, cook ground beef until no longer pink; stir in salsa, reduce heat and simmer 20 minutes or until liquid is absorbed; stir in beans and heat through.
  • 3. Spray a 9 X 13-inch baking dish with cooking spray; spread crushed tortilla chips in dish; spoon beef mixture over chips.
  • 4. Spread sour cream over beef; sprinkle olives, green onion and tomato over sour cream; top with Cheddar cheese.
  • 5. Bake in preheated oven for 30 minutes or until hot and bubbly.
