{easy} Lemon Lovers Layered Cake image

This easy lemon layered cake is for true lemon lovers! 3 layers of moist, sweet, lemon cake frosted with fluffy, light, lemon pudding frosting! Jazz up a boxed cake mix for the ultimate layered cake

Number Of Ingredients 11

1 box (16-18 oz) lemon cake mix
1 pkg (3 oz) instant lemon pudding mix
1 cup sour cream
1 cup vegetable or canola oil
4 large eggs
1/2 cup milk
1 teaspoon vanilla extract
pinch of salt
1 1/3 cups milk, whole milk is best
1 envelope Dream Whip
1 package (3 oz) instant lemon pudding mix

Steps:

  • Prepare 3 9-inch round cake pans by spraying with cooking spray.
  • TO MAKE THE CAKE: Combine all ingredients in a mixing bowl and stir until well combined and mixed together. Divide batter evenly among 3 9-inch round cake pans. Bake as directed on cake mix box.
  • Let cakes cool completely before frosting.
  • TO MAKE THE FROSTING: Combine all ingredients in a mixing bowl and beat with a handheld blender, or bowl of a stand mixer, on low speed until mixed together. Gradually increase speed to high and blend for 4-6 minutes, or until soft peaks form.
  • Refrigerate until use or spread right away in between each cake layer, on the top of the cake and around the sides.
  • For a thicker frosting you will want to double the frosting recipe.
