Easy Greek Garbanzo Stew image

Number Of Ingredients 15

1 tablespoon Olive Oil
1 onion medium chopped
2 garlic cloves minced
2 Cans 14.5 ounce Petite Diced Tomatoes
1 16 ounce can garbanzo beans rinsed
1 6 ounce can tomato paste
1/2 tsp dried rosemary
1 tsp oregano
1.5 tsp greek seasoning
1/4 tsp salt
1/4 tsp pepper
6 ounces baby spinach
batch whole wheat couscous
1 crumbled feta
14.5 ounces veg or chicken broth

Steps:

  • Heat oil in dutch oven. Add onions and saute oil soft. Add garlic for one minute. Add broth, tomato,beans, tomato paste, spices and seasonings. Bring to boil and reduce to simmer for 15 minutes. Add spinach and cook for 5. Serve with couscous and feta.
