Easy Chicken Tortellini Soup image

This is a simplified version of my mother-in-laws recipe for a great soup.

Number Of Ingredients 10

1 Tbsp butter
4 clove garlic minced
5-6 c chicken broth
1 pkg (9 ounces) frozen cheese tortellini
1 1/2 c cooked chicken
1 can(s) (14 ounces) stewed tomatoes
1 pkg (10 ounces) frozen spinach
1/2 tsp pepper
1 tsp dried basil
1/4 c grated parmesan cheese

Steps:

  • 1. In a large saucepan melt butter. Saute garlic in butter for 3-4 minutes. Stir in broth and tortellini and bring to a boil. Cover, reduce heat, and simmer for about 5 minutes.
  • 2. Add remaining ingredients, except grated Parmesan cheese. Simmer 10-15 minutes,stirring occasionally to break up frozen spinach. When soup is thoroughly heated check for seasonings and add salt pepper or garlic as desired. Serve in bowls with grated Parmesan on top.
