Easy Cheesy Tortellini Casserole image

Something I threw together one night when I wasn't up to a trip to the store and wanted to use up things I had on hand. Serve with a green salad and garlic bread, if desired.

2 Tbsp olive oil
1 medium yellow onion, peeled and diced
2 clove garlic, peeled and minced
1 lb ground turkey (thigh, not breast-too dry!)
1/4 c fresh basil, chopped
1 tsp dried rosemary, crushed
salt and pepper, to taste
1 can(s) (14.5 oz) tomato sauce
4 Tbsp tomato paste
1/4 c red wine
4 oz cream cheese
16 oz packaged fresh cheese tortellini
4 oz mozzarella cheese, sliced 1/4-inch thick
1/4 c grated parmesan cheese

Steps:

  • 1. In a large skillet, heat oil over medium heat. Add onion and saute until softened. Add garlic and cook 1 minute, being careful not to burn.
  • 2. Add ground turkey and cook, breaking up as it cooks, for 10 minutes, or until browned. Stir in basil, rosemary, salt and pepper, tomato sauce, tomato paste and wine. Bring to a simmer, cove, and cook 20 minutes.
  • 3. Add cream cheese and stir until melted and combined with sauce.
  • 4. Cook tortellini according to package instructions; drain.
  • 5. Preheat oven to 350F. Coat a 3-quart deep casserole with nonstick cooking spray.
  • 6. Put drained tortellini in casserole and top with sauce. Stir to mix in. Top with mozzarella and sprinkle parmesan over top.
  • 7. Bake 30 minutes, or until bubble and cheese is browned lightly.
