1 (30-oz) pkg frozen shredded hash brown potatoes
1 cup shredded cheddar cheese
10 3/4-oz can(s) condensed cream of potato soup
1/2 cup milk
1/2 cup green onion, cut into 1/2-inch pieces
1 Tbsp unsalted butter
1 tsp chopped garlic
1/2 Tbsp lemon juice
1 tsp salt
1 tsp black pepper

Steps:

  • 1. Preheat oven to 350°F. Spray an 8x12-inch (or 2-quart) baking dish with nonstick spray; set aside.
  • 2. In large mixing bowl, stir all ingredients together with a wooden spoon until well blended. Transfer mixture to prepared baking dish. At this step, feel free to add other ingredients you desire, such as crumbled cooked bacon, chopped cooked ham, chopped bell pepper, or finely chopped jalapeno pepper.
  • 3. Bake, uncovered, for 1 hour or until the hash browns are thoroughly cooked.
