My Summer Pasta Salad image

When the weather is too hot to cook, I like to put together this cool and delicious pasta salad. It goes great with everything~ hamburgers, hot dogs, sandwiches, etc. If you put cooked chicken in the salad, you will have a complete meal.

Number Of Ingredients 14

1 medium cucumber
1 medium yellow squash
1 medium zucchini
1 red bell pepper
1 green bell pepper
4 c fresh broccoli florets
3 c fresh cauliflower florets
1 small red onion, finely chopped
2 pkg italian salad dressing mix (good seasons)
1 16 oz box bow tie pasta (or your favorite pasta)
1/4 c olive oil
1/4 c red wine vinegar
3/4 tsp salt
1/2 tsp pepper

Steps:

  • 1. Wash the first 5 ingredients. Chop and transfer to a large bowl. Add the remaining vegetables. Sprinkle with dry salad dressing mix; toss to coat. Refrigerate, covered, at least 2 hours. (can be refrigerated overnight, if you want to prepare veggies ahead of time).
  • 2. Cook pasta according to package directions. Drain; rinse with cold water, drain again. Add to vegetable mixture. In a small bowl, whisk together the remaining ingredients. Add to the salad; toss to coat. Serve and enjoy.
