Steps:
- Preheat oven to 400.
- Heat Cast Iron pan to smoking. Add Olive Oil to coat
- Duck breast in pan, skin side down for 5 minutes
- Place in oven, 10 minutes
- Remove, temp should be 135. rest 10 minutes and carve
