Dried Cherry Muffins image

this is a recipe handed down from my mom.

1 c dried cherries, pitted
1 c buttermilk
1 3/4 c unbleached all-purpose flour
2 tsp baking powder
1 tsp baking soda
pinch salt
1 stick butter, unsalted, room temperture
1/4 c sugar
2 eggs, slightly beaten

Steps:

  • 1. mix the cherries and buttermilk to well combined in a small bowl, and put aside to soak for 30 minutes. Preheat you oven to 350 degrees f.
  • 2. Generously butter 18 muffin cups. In a large bowl, sift together flour, baking powder, baking soda, and salt. in another bowl, cream together the butter and sugar. Add the eggs and mix very well.
  • 3. Make a well in center of the dry ingredients, and spoon the cherries and buttermilk in it. Then add the butter-sugar mixture. Mix until well blended- but do not overmix.
  • 4. Fill the cups two thirds full with the batter, and bake till a toothpick inserted in the center comes out clean, 18 to 20 minutes. transfer muffins to wire rack to cool. serve
