DIY Spice Cake Mix image

Another DIY cake mix for your larder! I am collecting these to put in a cookbook for my children (and I of course!). A spice cake can be used for so many other kinds of cakes too...carrot cakes, applesauce cakes, oatmeal cakes, etc. I hope you enjoy this recipe and the convenience of being able to have it on the shelf if you need...

BAGGED CAKE MIX DRY INGREDIENTS:
2 1/3 c all-purpose flour
1/3 c nonfat dry milk powder
3 tsp baking powder
3/4 tsp salt
1 1/2 c granulated sugar
1/2 c plus 1 tablespoon butter flavored shortening
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground allspice
INGREDIENTS TO BE ADDED TO THE MIX:
1/2 c butter plus 1 tablespoon, softened
2 eggs
1 c water
1 tsp vanilla extract

Steps:

  • 1. Combine all dry mix ingredients and store in an airtight container or Ziploc bag with instructions and the date packaged.
  • 2. Preheat oven to 350F degrees. Grease and flour a 9 x 13-inch cake pan.
  • 3. In a large bowl with an electric hand mixer on high speed, cream butter until smooth. Add 1 egg at a time; beating well after each addition. Reduce speed to low and add water and vanilla and continue beating for approximately 2 minutes more.
  • 4. Slowly add the pre-made cake mix to the wet ingredients one cup at a time mixing thoroughly after each addition and scraping down sides.
  • 5. Pour into the prepared cake pan. Tap on counter to distribute and smooth top.
  • 6. Bake for approximately 25-30 minutes. Cool thoroughly before frosting or serving.
