Cold Chicken image

A delightful dim sum recipe from the Diana Liu cookbook. This is great for a large party or a banquet.

Number Of Ingredients 8

1 whole chicken, about 4 lbs
enough water, to cover chicken
3 tablespoons salt
1 piece fresh ginger (thumb size)
1 tablespoon chinese flower pepper (purchase in asian market)
1/2 cup soy sauce
2 tablespoons sesame oil
1/2 teaspoon msg

Steps:

  • Fill a large kettle 2/3 full of water.
  • Add chicken, salt, ginger, chinese flower pepper; bring to boil.
  • Cover and simmer for 1 1/2 hours.
  • Remove chicken and soak in 4 quarts of cold water for 1 hour.
  • Cut into bite-sized pieces and arrange on a platter.
  • Mix soy sauce, sesame oil and msg.
  • Pour mixture over chicken pieces; serve cold.
