Dixie Green Beans and Potatoes image

Traditional southern method for cooking green beans. Great way to use leftover ham. Can substitute smoked ham hocks or bacon. Season with salt according to saltiness of meat.

2 lbs fresh green beans, tips removed and cut in half
1 1/2 lbs new potatoes, cut in half if large
1 1/2 cups cooked ham, cubed
1/2 cup onion, diced
1/2 tablespoon rosemary
1/2 tablespoon lemon pepper
2 cups water

Steps:

  • In a medium hot pot cook ham and onion until it begins to brown (about 4-5 minutes).
  • Add water and stir scraping brown bits off bottom of pan.
  • Add green beans, potatoes, and seasonings.
  • Cover and cook 25-35 minutes until fork tender.
