Steps:
- Sprinkle steaks with salt
- Spread mustard on each side of steak
- 1 tsp of pepper on each side of steak
- heat oil in heavy skillet on med high heat
- Add steam 5 min on each side - med rare
- remove steak
- add shallots and garlic to pan - 15 sec
- stir in broth, cream and brandy, 1 tablespoon of mustard
- boil until thicken
