DIJON-PANKO CRUSTED CHICKEN image

chicken breasts
2T Dijon mustard
2 lg eggs
2 Cups panko
1t lemon zest
1/3 c grated parmesan
2/3 c canola oil

Steps:

  • Cut breasts in 1/2, pound down to 1/4" + and S&P Mix Dijon and eggs Mix panko, lemon zest and parm and s&p dredge chicken in egg mix and dry ingred. Lay on clean baking sheet in frig for 1 hr. Cook in hot oil 3 min on each side, drain on paper towel.
