This is a healthier version of our favorite banana bread recipe. It has very little fat yet still moist and light. The maple syrup also adds a nice depth of flavor. I use white whole wheat which is lighter, milder and less dense than regular whole wheat and would recommend it for this recipe. King Arthur Flour carries it.

Steps:
- Pre-heat oven to 350°F.
- Stir together all the wet ingredients (first 6) in a large bowl.
- In a smaller bowl stir together the dry ingredients.
- Add dry ingredients to the wet and mix until basically smooth.
- Pour batter into a well greased loaf pan and place into the oven to bake for 50-60 min or until tooth pick comes out fairly clean.
- Enjoy!
