Date Bars image

An easy to make, delicious bar that is great to take to parties, group functions etc. It is comfort food at its finest.

Number Of Ingredients 12

3/4 c evaporated milk
1 pkg (8 ounces) chopped dates
2 Tbsp sugar
1 tsp vanilla
1/2 c firmly packed brown sugar
1/2 c butter, softened
1 c flour
3/4 c quick-cooking oats
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
1/3 c coarsely chopped walnuts (optional)

Steps:

  • 1. Combine evaporated milk, dates, sugar and vanilla in medium saucepan. Cook over medium-low heat, stirring, until thickened (8 to 10 minutes). Stir on walnuts; remove from heat and cool.
  • 2. Sift the flour, salt, cinnamon and baking soda together; add oats. Beat brown sugar and butter on medium speed in large mixer bowl until creamy (1 to 2 minutes). Add flour mixture and stir until mixture resembles coarse crumbs. Reserve 1 cup.
  • 3. Press remaining crumbs into a greased 8 inch square baking pan. Spread date filling over crust. Top with 1 cup of reserved crumbs.
  • 4. Bake at 400 degrees for 20 to 25 minutes or until golden. Cut into bars.
