DAN'S BEST WILTED SPINACH SALAD image

Time 25m

Number Of Ingredients 8

6 c baby spinach leaves
1/4 c sliced green onions
3-4 slice bacon
3 Tbsp vinegar
1 tsp sugar
1 c chopped apple
1/3 c crumbled feta cheese
1 small red bell pepper, chopped

Steps:

  • 1. Mix spinach, green onion and chopped red bell pepper in a bowl and set aside. Cook bacon in a large skillet over medium heat until crisp.
  • 2. Remove bacon & place on paper towel, but save 2 tablespoons bacon drippings in skillet. Crumble bacon; set aside. Stir vinegar and sugar into reserved drippings; heat to a boil scraping bits as you go from bottom of skillet. Add spinach mixture to skillet. Toss 1/2 to 1 minute until spinach begins to wilt. REMOVE FROM HEAT.
  • 3. Add apple and feta; toss gently to mix. Transfer to a large bowl or platter and sprinkle with crumbled bacon. SERVE IMMEDIATELY.
  • 4. NOTE: Best if made using Baby leaf spinach, but you can use frozen if it is completely thawed, and excess water removed before adding it to the skillet.
