DANISH CABBAGE image

3/4 cup butter
18 cups (about 1 large head)thinly sliced red cabbage
2 cups blackberry-cranberry juice
1 cups dry red wine
1 1/2 cups red wine vinegar
3/4 cups sugar
1 1/2 orange, sliced
3 cinnamon sticks

Steps:

  • Melt butter in a heavy large saucepan over medium heat. add cabbage and saute 2 minutes. Add juice, wine, vinegar, sugar, orange and cinnamon. Simmer, stirring accaisionally, until cabbage is tender and almost all liquid has evaporated, about 1 hour. cabbage can be made 1 day ahead, Cool slightly, then cover and chill.
