Curry Broccoli Salad image

I discovered this recipe on the internet; I wish I had made it up myself. I made it for our Ladies' Workshop last weekend at church, and there was not a sunflower seed left! Everyone wanted the recipe. If you like a little curry, or alot, this salad will fit the bill.

Number Of Ingredients 9

6 C. fresh broccoli florets
1/2 lb. bacon, cooked and crumbled
1/2 C. diced onion
1/2 C. dried cherries, (can use craisins)
1/2 C. sunflower seeds, (may also use chopped walnuts)
3/4 C. mayonnaise
1 tsp. curry powder (get lg container at sam's or costco)
2 Tab. cider vinegar (optional)
1/4 C. white sugar

Steps:

  • 1. 1. Place the bacon in a large, deep skillet. Cook over med. high heat until the bacon is evenly brown. Drain, crumble and set aside.
  • 2. In a large bowl, combine the bacon, broccoli, onion, dried fruit and sunflower seeds.
  • 3. Whisk together the mayo, curry powder, sugar.(and vinegar). Pour dressing over salad; toss well to coat and marinate over night. I stir right before serving.
