CURRIED COUSCOUS WITH CHICKPEAS image

Yield 6 1 cup

Number Of Ingredients 12

2 cups organic vegetable broth
1/2 cup rasins
1 tsp curry powder
1/2 tsp garlic salt
1/2 tsp olive oil
1/4 tsp ground cumin
1/4 tsp ground black pepper
1 cup frozen green peas
1 (10 ounce) box of plain couscous
1/4 cup thinly sliced green onions
1/3 cup sliced almonds toasted
1 (16 ounce) can of chickpeas, rinsed and drained

Steps:

  • Combine first 7 ingredients in a medium saucepan; bring to a boil over medium-high heat. Stir in peas and couscous; cover. Remove from heat; let stand 5 minutes. Add green onions, almonds, and chickpeas; fluff gently with a fork
