Cucumber & Tomato Salad Caprese image

I have seven children - all with different likes and dislikes. Half are vegetarian. Some more vegetarian than others :) But all of them love this salad and ask for it all the time. The presentation is beautiful and tastes so good! I teach my children, presentation is everything in cooking. At least I try, doesn't always come out the way I like. Anyhoo, this is a lovely, fresh, healthy salad. Did I say it is pretty too? ;)

Number Of Ingredients 10

1 - large red tomato, sliced (round slices)
1 - large yellow tomato, sliced (round slices )( or two red )
1 - medium cucumber, sliced (round)
8 ounce(s) fresh mozzarella cheese, sliced (round)
2 tablespoon(s) extra-virgin olive oil
1 tablespoon(s) lemon juice ( squeezed fresh )
1/8 teaspoon(s) fresh ground pepper
1/8 teaspoon(s) salt
1/3 cup(s) coarsely chopped fresh basil or lemon basil
USE FRESH INGREDIENTS / A MUST

Steps:

  • On a large serving platter, arrange slices to make four colums, vertically, overlapping slightly in a single row. Red tomatoe slices - one row, cucumber slices - next row, yellow tomatoe slices -another row, and mozzarella slices outside row. Or if you have a good eye, mix them up - whatever looks good to you.
  • In a small bowl, combine oil, lemon juice, salt and pepper, mix well. Drizzle over salad. Sprinkle basil on top. Serve.
