Cucumber Dip image

You won't believe you wonderful and refreshing this dip tastes. Once I start eating it I keep going back for more. Of course home grown cucumbers are always better but store bought cucumbers will work just fine when you get a craving.

Number Of Ingredients 8

1 english or 2 medium cucumbers
1 8 oz pkg cream cheese, softened
1 1/2 Tbsp grated onion
1 tsp dried dill weed (or more to taste)
1/4 tsp cayenne pepper (or more to taste)
2 tsp lemon juice
salt to taste
1 drop green food color (optional)

Steps:

  • 1. Peel cucumbers and removed seeds with a spoon. Grate cucumbers.
  • 2. Drain all water from cucumbers, squeeze it in a paper towel to make sure most of the moisture is gone but don't make it bone dry.
  • 3. Put all of the ingredients into a blender and mix well.
  • 4. Serve cold with pita chips, white corn chips, thin cucumber slices, celery sticks, carrot sticks, grape tomatoes, etc.
