Crusty Potato Casserole image

Number Of Ingredients 12

2 1/2 c instant potato flakes
1/2 c lite mayonnaise
2 1/2 c boiling water
3-4 Tbsp butter
salt & pepper to taste
3 Tbsp non-dairy coffee creamer
1 1/8 c shredded mozzarell cheese
1 c lite sour cream
1/4 tsp garlic powder
1/8 tsp onion powder
1 Tbsp butter
1 c crushed corn flakes

Steps:

  • 1. Preheat oven to 400 degrees F. In a 2 quart casserole, combine all ingredients except 1 tablespoon of butter and corn flakes.
  • 2. Mix ingredients thoroughly. Sprinkle corn flakes on top of potatoes. Scatter small pieces of remaining 1 tablespoon of butter around on corn flakes. Bake till golden brown. Serve hot.
