Crunchy Baked Pesto Chicken image

1/2 cup panko bread crumbs
1/2 cup parmesan cheese, grated
1/2 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1 pound chicken thighs, boneless, skinless

Steps:

  • Preheat oven to 450*
  • Line baking sheet with foil or parchment paper
  • Combine panko, parmesan, olive oil, salt, and pepper in a bowl.
  • Place chicken one prepared baking sheet and coat each side with pesto.
  • Press panko mixture onto chicken.
