I have always loved beef stroganoff and using the crock pot makes this recipe easy! I like to enjoy this with a fresh green salad and crusty bread and butter, with fruit salad for dessert.

Steps:
- 1. Spray crock pot with cooking spray, I used canola.
- 2. Add first 11 ingredients to crock pot in order listed. Turn on high and cook for one hour. After one hour, stir ingredients thoroughly. Continue to cook on high for 3.5 more hours.
- 3. After a total of 4.5 hours on high, stir in sour cream to blend throughout mixture. Then add egg noodles, ensuring they are covered by liquid. Add more water, if necessary. Adjust salt and pepper, as needed. Cook an additional 30 minutes on high, until noodles are tender. Plate and enjoy!
- 4. NOTE: For those of you that do not cook with wine, you can substitute 1/2 - 3/4 cup beef broth (or water) and 2 - 3 Tbsp each of lemon juice and balsamic vinegar. Can be cooked on low setting for 6 - 8 hours. Add sour cream and noodles for last 45 minutes of cooking time.
