Creamy Watermelon Soup image

This decadent soup tastes almost like dessert! If you prefer it sweeter, additional sugar can be added.

1 1/2 cups seedless watermelon, diced
1/2 teaspoon vanilla
1/2 teaspoon berry sugar
3 -4 teaspoons nonfat sour cream or 3 -4 teaspoons non-fat vanilla yogurt
3 mint leaves

Steps:

  • Puree watermelon in a blender until smooth.
  • Add vanilla, sugar, and 3/4 of the sour cream/yogurt; blend well.
  • Chill overnight.
  • Garnish with remaining sour cream/yogurt and mint leaves.
  • Enjoy!
