CRANBERRY RING image

Yield 8 servings

Number Of Ingredients 9

2 (3 oz) packages raspberry jello
1 c boiling water
1 1/2 c cold water
2 large oranges
1/2 t grated orange zest
1 can whole cranberry sauce
1 c blanched almonds, chopped, toasted
crisp salad greens
creme fraiche/sour cream (optional)

Steps:

  • In a bowl combine the gelatin with boiling water, stir until dissolved. Add cold water. Chill until slightly set. Remove membrane from oranges and slice sections out of segments. Cut each in half. Break up cranberry sauce and mix with oranges and toasted almonds into partially thickened gelatin. Turn into a 6 or 7 cup ring mold. Cover and chill until firm. To serve: Lay lettuce leaves on plate, unmold gelatin onto lettuce leaves. Pass with creme fraiche/sour cream.
