Cranberry Pudding with Hot Butter Sauce image

This is a great recipe for when cranberries are BOGO at your supermarket. Makes a yummy dessert!

2 cup(s) all-purpose flour
2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1 cup(s) sugar
1 cup(s) milk
3 tablespoon(s) butter, melted
2 cup(s) fresh cranberries
1 cup(s) sugar
1/2 cup(s) butter
1/2 cup(s) evaporated milk
1 teaspoon(s) vanilla extract

Steps:

  • Combine the flour, baking powder, salt, and sugar in a medium bowl; stir well.
  • Add the milk and melted butter to the dry ingredients, stirring until blended. Gently fold in the cranberries.
  • Pour the batter into a buttered 8 inch square pan. Bake, uncovered, at 350 degrees for 45 minutes or until the pudding is lightly browned. Serve warm with the Hot Butter Sauce.
  • Hot Butter Sauce: Combine 1 cup sugar, 1/2 cup butter, and 1/2 cup evaporated milk in a small saucepan. Bring to a boil; reduce heat, and cook, stirring occasionally until the sugar dissolves and the butter melts. Stir in the vanilla. Serve over the Cranberry pudding.
