Cranberry Chicken image

This recipe came from Cambpell's soup cookbook. Of course when I saw the word cranberry, well had to try it ! It is easy and good with low-fat Cream of Mushroom or or low-fat Cream of Chicken soup in the topping ! I figure we can never have enough chicken recipes ! Right?

Number Of Ingredients 8

1 Tbsp vegetable oil
4 boneless chicken breast halves
1/4 c each of cranberry juice and orange juice
1 can(s) (10 3/4 oz) campbell's cream of mushroom or cream of chicken 98% fat free soup
1 Tbsp dried cranberries
1 Tbsp chopped fresh sage or 1 tsp. dried sage leaves crushed
1/8 tsp pepper
4 c cooked instant white rice

Steps:

  • 1. 1.HEAT oil in skillet. Add chicken and cook until browned
  • 2. 2.ADD juices, soup, cranberries, sage, and pepper. Heat to a boil. Cover and cook over low heat 5 minutes. or until done.
  • 3. SERVE over rice. Serves 4
