CRANBERRY ALMOND BROCCOLI SALAD image

1/4 cup RED ONION - CHOPPED FINELY
1/3 cup MAYONNAISE W/ OLIVE OIL
3 tablespoons PLAIN GREEK YOGURT
1 tablespoon APPLE CIDER VINEGAR
1 tablespoon HONEY
1/4 teaspoon SALT
1/4 teaspoon GROUND BLACK PEPPER
4 cups BROCCOLI - COARSELY CHOPPED
1/3 cup SLIVERED ALMONDS
1/3 cup DRIED CRANBERRIES
5 slices BACON

Steps:

  • COOK BACON WELL AND CRUMBLE - SET ASIDE
  • SOAK RED ONION IN COLD WATER FOR 5 MINUTES. DRAIN.
  • COMBINE MAYONNAISE, YOGURT, VINEGAR, HONEY AND SALT STIRRING WELL.
  • PLACE BROCCOLI IN A LARGE BOWL AND ADD REMAINING INGREDIENTS. MIX WELL AND ALLOW TO CHILL FOR AT LEAST ONE HOUR BEFORE SERVING.
