CRANBERRY ALMOND BISCOTTI image

Number Of Ingredients 11

2 1/4 c flour
1 c sugar
1 t baking powder
1/2 t baking soda
1 t cinnamon
1/2 t nutmeg
2 eggs
2 egg whites
1 T almond extract
1/2 c slivered almonds
6 oz bag Craisins

Steps:

  • Preheat to 325 Combine dry ingredients in large bowl. Whisk together eggs, egg whites and almond extract in separate bowl. Add to dry and mix with mixer just until moist. Add almonds and Craisins and mix well. Divide dough in half and on floured surface pat out to 14" x 1 1/2" log. Place on parchment covered sheet and bake 25-30 mins until firm. remove from overn. Reduce temp to 300. Cool slightly, slice into 1/2" pieces. Stand upright on sheet and bake 15 mins
