Couscous Salad image

What a terrifically light salad! We weren't able to find the spicy basil in our area, but I can't imagine this salad being any better. Thanks for sharing, Joan!

Number Of Ingredients 9

1 c couscous plain
1 c water or broth,chicken, beef, or veg
2 tsp butter
1 Tbsp basil, fresh about 10 leaves chopped
1 tsp mint, fresh about 6 small to med leaves chopped
1 Tbsp spicey basil about 10 med leaves chopped
2 large green onion chopped using white and green
2 large tomato diced
3 Tbsp salad oil, use a light oil

Steps:

  • 1. cook couscous as directed. Using broth or water.
  • 2. after cooking add herbs mint and basil. If you wish you can add salt&pepper but I find it really doesn't need it.
  • 3. add 3 tablespoons salad oil.
  • 4. chill for at least 30 minutes
  • 5. add tomato's and onion toss and serve.
