Steps:
- 1. In a medium skillet, heat 1-2 tablespoon oil over moderate heat.
- 2. Add pepper, zucchini, onion and asparagus and saute, stirring, for 5 minutes or until crisp-tender.
- 3. In a medium saucepan, bring 1-1/4 cups water or chicken broth to a boil.
- 4. Add remaining oil and couscous.
- 5. Cover, remove from heat and let stand 5 minutes.
- 6. Toss together couscous, seasonings and vegetables and serve.
