Country Apple Coffee Cake image

This recipe comes from a cookbook of mine that is probably 30 years old and was my very first cookbook. It's now tattered and falling apart with the front cover missing. But the recipes are absolutely wonderful and this one was a Pillsbury Bake-Off winner. I've made this recipe over and over and everyone eats it right up! Enjoy!

2 tablespoons butter, softened
1 1/2 cups chopped peeled apples
10 ounces biscuits
1/3 cup brown sugar, firmly packed
1/2 cup pecan pieces
1/4 teaspoon cinnamon
1/3 cup light corn syrup
1 1/2 teaspoons whiskey
1 egg
1/3 cup powdered sugar
1/4 teaspoon vanilla
1 -2 teaspoon milk

Steps:

  • Preheat oven to 350 degrees.
  • Using 1 tablespoon of the butter, grease bottom and sides of a 9-inch round cake pan.
  • Spread 1 cup of the apples in pan.
  • Separate the biscuits.
  • Cut each one into 4 pieces.
  • Arrange point side up over apples.
  • Top with remaining apples.
  • In small bowl, combine remaining 1 tablespoon butter, brown sugar, cinnamon, corn syrup, whiskey, and egg.
  • Beat well.
  • Stir in pecans.
  • Spoon over biscuit pieces.
  • Bake 35-45 minutes or until brown.
  • Prepare glaze and drizzle over coffee cake.
